Sweet Potato Brownie

A delicious alternative brownie with hidden healthy ingredients and less sugar.

Ingredients

  • 2 cups cooked mashed sweet potato (approx 3 med sized)
  • 2 large eggs (lightly beaten)
  • 1/2 cup peanut butter
  • 1/2 cup honey (maple/agave)
  • 1/4 cup cottage cheese
  • 2 tsp vanilla essence/extract
  • 1/2 cup protein powder (choc or vanilla)
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 tsp cinnamon spice
  • 1 tbsp (16g) noshu dark choc chips

Method

  1. Sift all dry ingredients into small bowl (except choc chips).
  2. Mix all wet ingredients into large bowl, add in dry ingredients and combine well.
  3. Pour batter into lined and greased 20cm × 20cm square slice tin and sprinkle choc chips evenly over the top.
  4. Bake in moderate oven for 28-30 mins or until spike comes out clean.

Moist & undercooked better than overcooked in my opinion
