Sweet Potato Brownie
A delicious alternative brownie with hidden healthy ingredients and less sugar.
Ingredients
- 2 cups cooked mashed sweet potato (approx 3 med sized)
- 2 large eggs (lightly beaten)
- 1/2 cup peanut butter
- 1/2 cup honey (maple/agave)
- 1/4 cup cottage cheese
- 2 tsp vanilla essence/extract
- 1/2 cup protein powder (choc or vanilla)
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 tsp cinnamon spice
- 1 tbsp (16g) noshu dark choc chips
Method
- Sift all dry ingredients into small bowl (except choc chips).
- Mix all wet ingredients into large bowl, add in dry ingredients and combine well.
- Pour batter into lined and greased 20cm × 20cm square slice tin and sprinkle choc chips evenly over the top.
- Bake in moderate oven for 28-30 mins or until spike comes out clean.
Moist & undercooked better than overcooked in my opinion
