Cottage Cheese Egg Bites
Savory, protein-rich egg muffins with a creamy cottage cheese base, melty cheddar, hearty ham, and sweet bursts of capsicum and corn. Light, fluffy, and perfect for a quick, nutritious bite.
Ingredients
- 4 large eggs
- 1/2 cup cottage cheese
- 1⁄4 cup shredded cheddar cheese (or cheese of choice)
- 1/4 cup diced capsicum
- 1/4 cup sweetcorn
- 1⁄4-1⁄2 cup chopped ham
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon paprika
Instructions
- Preheat Oven to 175°C. Lightly grease a muffin tin. (Or 2 x mini-muffin trays) (Makes 24 mini-muffins)
- Blend eggs & cottage Cheese with a hand blender in a medium bowl until smooth and frothy.
- Add other ingredients - stir in the capsicum, corn, ham, salt, pepper, and garlic powder.
- Divide mixture evenly among muffin cups, filling each about 3/4 full. (ensuring to scoop the good stuff from the bottom of bowl into each cup)
- Bake for 20-25 minutes, or until set and lightly golden on top.
- Cool & Serve: Let cool slightly before removing. Enjoy warm or store for later airtight container in the fridge for up to 4 days
Tips & Variations
You could easily opt for peas, spinach, red onion, cooked chicken breast - any fine diced vegetables would go into this egg base easily.
